Ajiaco - Traditional Corn and Potato Soup

This hearty soup is a specialty of the mountainous region around Bogotá, and one of Colombia's most famous dishes. Made with chicken, three varieties of potatoes and a common herb known as guasca, Ajiaco is about as simple, delicious, and comforting as food gets.

One bag serves 4 large portions (or 6 small)

Ajiaco Santafereño is a traditional Colombian soup and one of the country's most iconic dishes. This rich, invigorating soup is made with pieces of chicken, chunks of corn on the cob and different types of native potatoes (tiny papas criollas that fall apart and thicken the soup, and give the soup its characteristic yellow color; the waxy sabanera and/or the soft pastusa), and guasca (Galinsoga parviflora), a weedy, aromatic herb common in all America that lends the dish its distinctive flavour.
Ajiaco soup is typically served with table cream, capers and avocado all mixed in just before eating in the proportions each individual prefers.
